Dishing on Warewash: 10 Ways to Improve Your Program

When you have a warewash program in your business or organization there are many ways for costs to leak out. From setting up flow correctly through ongoing daily operations, Nassco warewash experts know them all. Our customers get regular assessments and feedback from us on how to make their program as lean, safe, and efficient as possible.

Following are some of the common complaints we hear from customers and the solutions we recommend to address them.

Operational costs seem high for the size of our business. This is a broad statement and might be caused by any number of things such as inefficient procedures, not managing labor well, using wrong detergents or dilutions, or dish tables that are too small, to name just a few. Nassco's approach is to do an analysis of your overall operation, then recommend correct equipment, chemicals and procedures to support sanitation, safety, efficient workflow, and lower costs.

Chemicals take up too much space. Use concentrated solid chemicals like those from Sunburst Chemicals. Solids take up 10x less space, are more economical, and produce less packaging waste. Plus they can't be accidentally spilled or overused by employees and are a safer type of chemical.

Employees pour too much product. This is a matter of training. As a Nassco warewash customer, we'll train staff on proper procedures, chemical dilutions and proportions, and how to be efficient and effective in labor and product usage. An additional solution is to use concentrated closed-loop Dawn Pot n Pan detergent, run through a dispensing system, so pouring isn't necessary.

Dishes don't dry fast enough. It's possible you don't have adequate ventilation in your warewash area. Without it there will always be excessive humidity levels not conducive to rapid drying of clean dishes. Be sure to rack your ware properly so water can run off easily. Finally, consider using a rinse aid such as Clarity to reduce drying times.

There's foaming inside our dish machine. The biggest culprit of this issue is the introduction of pot and pan soap when you have soft water. Some foods with proteins, such as eggs or other dairy items, can also cause foaming issues in your dish machine. Be sure to scrape your soiled dishware well to help avoid this problem.

Our floor is slippery in certain areas. Commercial kitchen floors are a major hazard for slip and fall accidents because of grease and oils that spill and splatter. We recommend SparClean Sure Step. This no-rinse enzyme based product will break down built-up grease, improve traction, and make for safer passage in your kitchen!

We get spots on glasses. Spots can a result of poor pre-scrapping and racking, not changing the dishmachine water frequently enough, or excessive water hardness. However, it also can also result from not matching your chemicals to the type of water in your facility.
